If they contain private data, you cannot license them at all, so there
is no open source licence, for a work that include those parts of the
training data, so there is no need for such a licence to account for
the privacy.

I think you will also have troubles with fine tuning, as that can
involve human judgement on responses, which might not repeat in the
exact same form, so even with detailed logs, you wouldn't be able to
script the human decisions.
